Oriental Chicken Salad

Serves 8-10

2 lbs Cole Slaw mix
1 bunch green onions cut into slaw
4 pkgs. Ramen Noodles
1/4 cup butter or marj.
1/2 cup slivered almonds
4-6 cups cooked chopped chicken (I just use the meat off a rotisserie chicken)

Place cole slaw mix in a large bowl, mix in green onions. In frying pan melt the butter then crunch up the Ramen noodles in the bags they're in and then dump into skillet, removing the seasoning pack. Add the almonds to the frying pan too. Stir constantly until the noodles and almonds are lightly browned.

Just before serving add browned noodles to the slaw mix. Stirring well, add the dressing.

Dressing:
1 cup water
1/2 cup vegetable oil
1/2 cup sugar
1/4 cup vinegar
3 Tablespoons soy sauce

Place all the ingredients in a pint size jar and shake well. Just before serving toss the salad with the dressing.

Banana Nut Bread

Banana Nut Bread

2 ripe bananas mashed
2 eggs
1 3/4 cup flour
1 1/2 cup sugar
1/2 cup oil
5 Tablespoons buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
1/2 tsp salt
1/2 cup nuts (optional)

Combine all ingredients and mix well. Pour into greased and floured loaf pan and bake about 1 hour and 20 minutes at 325 degrees. Makes 1 loaf.

Soft Sugar Cookies

1 cup shortening
1 cup sugar
2 eggs
1 tsp vanilla
1 tsp almond extract
2 1/4 cups flour
1/2 tsp baking soda
1 tsp salt

Beat together shortening, sugar, eggs, vanilla and almond extract. Sift together flour, soda, and salt. Mix thoroughly. Using a cookie scoop, scoop out cookie dough and gently dip top in some sugar. Place on ungreased baking sheet. Bake 8-10 minutes at 375 degrees. Don't overbake, and you'll have mouth watering sugar cookies.

Pumpkin Cookies

2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 1/2 cups sugar
1/2 cup (1 stick) butter, softened
1 cup pumpkin (Libby's)
1 large egg
1 tsp vanilla

In a bowl combine flour, baking soda, baking powder, cinnamon, nutmeg and salt. In a large bowl cream butter and sugar. Add egg and mix thoroughly. Mix in pumpkin and vanilla then gradually add the flour mixture. Place tablespoon size of dough onto a baking sheet. Bake for 15-18 minutes at 350 degrees. Let the cookies cool 2 minutes on baking sheet and then move to a cooling rack. Glaze the cooled cookies and enjoy.

Glaze Recipe:
2 cups powdered sugar
3 TBS milk
1 TBS melted butter
1 tsp vanilla.

Stir together and then drizzle over cookies.

5 Different Pound Cake Recipes


SOUR CREAM POUND CAKE

This pound cake is a bit creamier in texture with a rich flavor that comes from the addition of sour cream.

Serves 16
Prep Time: 20 minutes
Bake Time: 1 to 11/2 hrs.

3 cups flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup butter, softened
2 cups sugar
1 tsp vanilla
1 tsp almond flavoring
6 eggs
1 cup sour cream

Preheat oven to 350 degrees. Grease and flour Bundt pan, tube pan, or two loaf pans.

In a medium bowl, sift together flour, baking powder, baking soda, and salt. In a separate bowl, beat butter at medium speed. Gradually add sugar, continually beating for 6 minutes. Mixture should be light and fluffy and sugar should be dissolved. Add vanilla, almond flavoring, and eggs one at a time beating after each addition. Add dry ingredients and sour cream alternately, beating after each addition, just until mixed. Pour into prepared pan. Bake 1 to 1/2 hours, until inserted toothpick comes out clean.

Topping:
Top Pound cake slices with a generous scoop of softened vanilla bean ice cream and drizzle liberally with chocolate syrup.

EASY CREAM CHEESE POUND CAKE

Doesn't cream cheese make everything tastier? This version is a little denser than the others, but it has a deliciously sweet cream cheese flavor.

Serves 16
Prep Time: 15 minutes
Bake Time: 1 hour

1 cup butter, softened
1 8 oz package cream cheese, softened
3 cups sugar
1/2 cup vegetable oil
1 tsp vanilla or almond flavoring
6 eggs
3 cups flour
1/2 tsp baking soda
1/2 tsp baking powder

Preheat oven to 350 degrees. Grease and flour Bundt pan, tube pan, or 2 loaf pans.

Cream together butter and cream cheese. Add sugar and beat until fluffy. Add oil, vanilla or almond flavoring, and eggs, and beat until well blended. Add mixed dry ingredients and stir until moistened. Pour batter into prepared pan. Bake 1 hour, or until cake springs bake to the touch. Let stand in pan 15 minutes. Remove from pan to cool.

Topping:
Spoon warm cranberry or canberry-orange sauce over pound cake slices and top with scoops of French vanilla ice cream.


OLD-FASHIONED POUND CAKE

What makes this version old-fashioned? Lots of powdered sugar and flour.

Serves 16
Prep Time: 20 minutes
Bake Time: 1 to 11/2 hours

1 pound butter, softened
4 cups sifted powdered sugar
6 eggs
2 tsps vanilla
1 tsp almond flavoring
4 cups sifted cake flour
1/2 tsp salt

Preheat oven to 350 degrees. Grease and flour Bundt pan, tube pan, or 2 loaf pans.

Cream butter. Gradually add powdered sugar, beating until light and fluffy. Add eggs, one at a time, beating after each addition. Add vanilla and almond. Mix together flour and salt. Add to butter mixture and stir until just combined. Pour into pans and bake 1 to 1/2 hours, or until cake springs back to the touch. Let stand in pan 15 minutes. Turn out to cool, or serve warm.

Topping:
Top with strawberries and whipped cream.


BROWN SUGAR POUND CAKE

This is our favorite! The lemon glaze is perfect with the bit of zest from the brown sugar.

Servings: 16
Prep Time: 20 minutes
Bake Time: 1 to 1 1/2

2 cups light brown sugar
1 cup butter softened
3 eggs
1 cup sour cream
2 1/4 cups cake flour
1 tsp grated lemon peel
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp salt
1 cup confectioners' sugar
2 Tblsp fresh lemon juice

Preheat oven to 325 degrees. Grease and flour 10 inch tube cake pan.

In mixing bowl, cream brown sugar and butter until light and fluffy. Add eggs, one at a time, beating after each addition. Fold in sour cream alternately with flour. Add remaining ingredients (except confectioners' sugar and lemon juice) and mix well. Pour batter into cake pan. Bake 1 to 1 1/2 hours. Cool in pan on wire rack for 15 minutes. Remove from pan and cool completely.

Lemon Glaze:
Whisk together sugar and lemon juice. Add more lemon juice if necessary. Drizzle over cake.

MY FAVORITE CHOCOLATE POUND CAKE

Serves: 16
Prep Time: 20 minutes
Bake Time: 1 to 1 1/2 hours

3 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 Tblsp cocoa
1 cup butter, softened
1/2 cup vegetable shortening
3 cups sugar
5 eggs
1 cup buttermilk
1 Tblsp pure vanilla extract

Preheat oven to 325 degrees. Grease and flour a 10-inch Bundt pan.

Sift together flour, baking soda, baking powder, and cocoa, and set aside.

In a separate bowl, using an electric mixer, cream together butter, shortening, and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Add flour mixture and buttermilk alternately to butter mixture, beginning and ending with flour mixture. Add vanilla and mix well. Pour batter into prepared pan. Bake for 1 to 1/2 hours, or until cake is done. Remove from oven and allow cake to cool in pan for 10 minutes. Invert onto cake plate and serve.

Topping:
Those of you who are chocoholics will enjoy this cake topped with your favorite chocolate frosting.

Best Ever Meatloaf

2 eggs
2/3 cup milk
3 slices bread broken up
1 cup shredded cheddar cheese
1 tsp salt
1/4 tsp black pepper
1/2 cup onion chopped
1/3 cup green bell pepper chopped
1 1/2 lbs lean ground meat

Topping:
1/2 cup tomato sauce
1/2 cup brown sugar
1 tsp mustard

Beat eggs in a large bowl. Add milk and bread chunks. Let stand until bread absorbs the liquid. Stir in onion, bell pepper, cheese, salt and pepper. Add ground meat and mix well. Shape into a loaf and place in a greased 9x13 pan.
Bake at 350* for 45 min.

Combine topping and spoon over meatloaf after 30 minutes. Occasionally spoon over meatloaf during the rest of the baking time.

Serves 6 adults.

Serving suggestion: make twice baked potatoes and steam carrots as delicious sides.

Tempting Appetizers

Delicious Deviled Eggs

7 eggs hard boiled
1/3 cup Hellmans Mayonaisse
1-2 Tablespoons mustard
pinch of salt
few shakes of black pepper

After the eggs are boiled and cooled, peel them and then cut in half. Scoop out the yolks of 6 eggs using a spoon. Mash up the yolks plus the 7th egg very well. Now add the mayo, mustard, salt and pepper. Stir well and then fill the egg halves with this filling. Refrigerate until serving. Garnish with little shakes of paprika on top of the eggs.
